Ingredients

  • 2 cups green split peas
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 bay leaves
  • Salt and pepper, to taste

Directions

  1. Rinse the split peas and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the vegetable broth, split peas, carrots, celery, and bay leaves. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, stirring occasionally.
  4. Remove the bay leaves and season with salt and pepper, to taste. Serve.
