Ingredients

  • 1/4 cup pumpkin puree
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1/2 cup rolled oats
  • 1/4 cup vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, mix together the pumpkin puree, almond butter, and honey until combined.
  3. Add the oats, protein powder, pumpkin pie spice, baking powder, and salt and mix together until a thick dough forms.
  4. Using a tablespoon, form small balls of cookie dough and place them on a parchment-lined baking sheet.
  5. Bake for 12-15 minutes until the cookies are lightly golden.
  6. Allow to cool before serving.
