Ingredients
- 4 pounds of Yukon gold potatoes, peeled and cubed
- 1/4 cup extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Directions
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15-20 minutes. Drain.
- Return potatoes to pot over low heat and mash with a potato masher or fork until desired consistency is reached. Stir in olive oil and Parmesan cheese.
