Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup maple syrup
  • 3 large egg yolks
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts

Directions

  1. In a medium saucepan, combine the cream, milk, maple syrup, egg yolks, cinnamon, and salt. Whisk to combine.
  2. Cook over medium heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon, about 10 minutes.
  3. Pour the mixture into a bowl and let cool to room temperature.
  4. Chill the mixture in the refrigerator for at least 2 hours, or overnight.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
  6. When the ice cream is almost finished churning, add the chopped walnuts and mix until evenly distributed.
  7. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
