- 1 cup heavy cream
- 1 cup whole milk

Directions
- In a medium saucepan, combine the cream, milk, maple syrup, egg yolks, cinnamon, and salt. Whisk to combine.
- Cook over medium heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon, about 10 minutes.
- Pour the mixture into a bowl and let cool to room temperature.
- Chill the mixture in the refrigerator for at least 2 hours, or overnight.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
- When the ice cream is almost finished churning, add the chopped walnuts and mix until evenly distributed.
