Ingredients

  • 1 ½ cups (225g) all-purpose flour
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 1/3 cup (75g) cold butter, cubed
  • 1/4 cup (60ml) cold water
  • 2 cups (400g) sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups (480ml) whole milk
  • 4 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 2 cups (300g) diced mango (fresh or frozen)
  • 1 cup (150g) fresh or frozen blueberries

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) pie dish.
  2. In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse breadcrumbs. Add the cold water and stir together until a dough forms. Turn the dough onto a lightly floured surface and knead gently until it is smooth. Roll the dough out to fit the pie dish, then place it in the dish and trim the edges. Prick the base with a fork and bake for 15 minutes.
  3. In a medium saucepan, combine the sugar, cornstarch, flour, and salt. Gradually whisk in the milk and egg yolks until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil. Boil for 1 minute, then remove from the heat and stir in the butter and vanilla extract.
  4. Spread the mango and blueberries in the bottom of the pastry shell. Pour the custard over the top and spread evenly. Bake for 25-30 minutes, or until the custard is set and the pastry is golden brown.
  5. Remove from the oven and allow to cool before serving.
