Ingredients

  • 1 large pork shoulder
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 4 carrots, sliced
  • 2 potatoes, cubed
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1 teaspoon Hungarian paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 350°F.
  2. In a large roasting pan, add the pork shoulder, onions, garlic, carrots, potatoes, marjoram, thyme, paprika, salt and pepper. Drizzle with olive oil and toss to combine.
  3. Cover the pan with foil and bake for 2 hours, or until the pork is cooked through and the vegetables are tender.
  4. Remove the foil and continue to bake for an additional 30 minutes to brown the pork and vegetables.
  5. Let the pork roast rest for 10 minutes before slicing and serving.
