Spinach-Stuffed Flounder with Mushrooms and Feta

Ingredients

  • 4 flounder fillets
  • 2 cups of fresh spinach, chopped
  • 1 cup of mushrooms, sliced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a medium bowl, combine spinach, mushrooms, feta cheese, olive oil, salt and pepper.
  3. Lay flounder fillets on a greased baking sheet.
  4. Divide the spinach mixture among the four fillets and spread to cover the top of each fillet.
  5. Bake in preheated oven for 25 minutes, or until fish is cooked through.
  6. Serve warm.
