Ingredients
- 4 flounder fillets
- 2 cups of fresh spinach, chopped
- 1 cup of mushrooms, sliced
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 375 degrees Fahrenheit.
- In a medium bowl, combine spinach, mushrooms, feta cheese, olive oil, salt and pepper.
- Lay flounder fillets on a greased baking sheet.
- Divide the spinach mixture among the four fillets and spread to cover the top of each fillet.
- Bake in preheated oven for 25 minutes, or until fish is cooked through.
- Serve warm.
