Ingredients

  • 1 lb of asparagus, trimmed and cut into 1-inch pieces
  • 1 avocado, peeled and diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 1 tablespoon of fresh lime juice
  • 2 tablespoons of chopped fresh cilantro

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the asparagus and garlic to the skillet and sauté for about 5 minutes, stirring frequently.
  3. Add the salt and pepper and stir to combine.
  4. Remove the asparagus from the skillet and set aside to cool.
  5. In a medium bowl, mash the avocado with a fork.
  6. Add the lime juice, cilantro, and cooled asparagus and stir to combine.
  7. Serve the asparagus-guacamole immediately.
