Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, finely minced
- 1 teaspoon curry powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- 2 cups low-sodium vegetable broth
- 2 ripe peaches, peeled and chopped
- 1/2 cup plain Greek yogurt
- Salt and freshly ground black pepper, to taste
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté for 5 minutes, stirring occasionally, until the onion is softened.
- Add the curry powder, ginger, and turmeric and stir to combine. Cook for 1 minute, stirring constantly, until fragrant.
- Add the vegetable broth and peaches and bring to a simmer over medium-high heat. Reduce the heat to medium-low and simmer for 10 minutes.
- Remove the pan from the heat and stir in the Greek yogurt. Using an immersion blender, blend the soup until smooth.
- Season to taste with salt and pepper. Serve hot.
