Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 3/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the 1 1/2 cups flour and 1/2 cup powdered sugar. Cut in the cold butter using a pastry cutter or your hands until the mixture becomes crumbly.
  3. Press the mixture evenly into the bottom of a greased 9x13-inch baking dish.
  4. Bake the crust in the preheated oven for 20 minutes or until it is lightly golden.
  5. While the crust is baking, in another mixing bowl, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until well combined.
  6. Pour the lemon mixture over the baked crust as soon as it comes out of the oven.
  7. Return the baking dish to the oven and bake for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
  8. Remove the baking dish from the oven and let it cool completely on a wire rack.
  9. Once cool, dust the top with powdered sugar.
  10. Cut into triangles and serve.
