Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 3/4 cup unsalted butter, cold and cut into small pieces
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 3/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- powdered sugar, for dusting
Directions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the 1 1/2 cups flour and 1/2 cup powdered sugar. Cut in the cold butter using a pastry cutter or your hands until the mixture becomes crumbly.
- Press the mixture evenly into the bottom of a greased 9x13-inch baking dish.
- Bake the crust in the preheated oven for 20 minutes or until it is lightly golden.
- While the crust is baking, in another mixing bowl, whisk together the eggs, granulated sugar, 1/4 cup flour, lemon juice, and lemon zest until well combined.
- Pour the lemon mixture over the baked crust as soon as it comes out of the oven.
- Return the baking dish to the oven and bake for an additional 20-25 minutes or until the filling is set and the edges are lightly golden.
- Remove the baking dish from the oven and let it cool completely on a wire rack.
- Once cool, dust the top with powdered sugar.
- Cut into triangles and serve.
