Ingredients

  • 4 whole-wheat pita pockets
  • 1 cup baby spinach leaves
  • 1/2 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350°F.
  2. Cut each pita pocket in half and place them on a baking sheet.
  3. In a medium bowl, combine spinach, tomatoes, feta, olive oil, vinegar, garlic powder, oregano, salt, and pepper. Mix until all ingredients are evenly distributed.
  4. Spoon mixture into each pita pocket half.
  5. Bake in preheated oven for 15 minutes, or until pita pockets are golden brown and crisp.
