Ingredients

  • 3 cups cooked Arborio rice
  • 1/2 cup granulated sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup raisins (optional)

Directions

  1. In a large bowl, combine the cooked Arborio rice, sugar, cream, vanilla, cinnamon and nutmeg, and mix until well combined.
  2. Transfer the mixture to a medium saucepan and cook over medium heat, stirring occasionally, for 20-25 minutes, or until the mixture has thickened and the Arborio rice is tender.
  3. Stir in the raisins, if using, and cook for an additional 3-5 minutes.
  4. Serve the pudding warm or cold, topped with a sprinkle of cinnamon.
