Ingredients

  • ½ cup butter
  • 1 cup light brown sugar
  • 1/3 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 3 cups quick-cooking oats

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, melt the butter over medium heat.
  3. Add the brown sugar and corn syrup, stirring until fully combined.
  4. Bring the mixture to a boil, stirring constantly.
  5. Remove the pan from the heat and stir in the vanilla and baking soda until fully combined.
  6. Add the oats and stir until fully incorporated.
  7. Drop the dough by the tablespoonful onto the prepared baking sheet, leaving about 1 inch between each drop.
  8. Bake for 10 minutes, until the edges are lightly browned.
  9. Allow the cookies to cool for 5 minutes before transferring them to a wire rack to cool completely.
