Ingredients
3 cups of diced potatoes
1 onion, chopped
2 cups of shredded cheddar cheese
1 package of frozen pierogies, thawed and halved
1/2 cup of heavy cream
2 tablespoons of butter, melted
1/2 cup of diced bacon
Salt and pepper to taste
Directions
Preheat oven to 375°F.
In a large bowl, mix together potatoes, onion, cheese, and pierogies.
In a separate bowl, mix together cream and melted butter.
Spread half of the potato mixture in the bottom of a greased 9x13 inch baking dish.
Pour the cream mixture over the potatoes. Spread the remaining potato mixture over the cream mixture.
Sprinkle the bacon over the top of the casserole.
Bake for 25-30 minutes, or until potatoes are tender and bacon is cooked.
Allow to cool for 10 minutes before serving.

Pierogi casserole is a popular comfort food in Poland.
It is traditionally served with sour cream.
The pierogi casserole can be made ahead of time and refrigerated until ready to bake.
This dish can be made vegetarian by omitting the bacon and using vegetable stock instead of cream.
