Ingredients

  • 1 package (8 ounces) of lean ground beef
  • 1 packet of taco seasoning mix
  • 1 bag (8 ounces) of shredded lettuce
  • 1/2 cup of low-fat sour cream
  • 2 tomatoes, diced
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of black beans, rinsed and drained
  • 1/2 cup of corn kernels, canned or frozen
  • 1/4 cup of chopped green onions
  • 1/4 cup of sliced black olives
  • 1/4 cup of salsa
  • 1/4 cup of light ranch dressing

Directions

  1. In a large skillet, cook the ground beef over medium heat until it is no longer pink. Drain fat, if necessary.
  2. Add the taco seasoning mix and 1/2 cup of water to the skillet. Bring to a boil and reduce heat to low. Simmer for 5 minutes.
  3. In a large bowl, combine the cooked ground beef, lettuce, sour cream, tomatoes, cheese, black beans, corn, green onions, olives, salsa, and ranch dressing. Mix until evenly combined.
  4. Divide the salad mixture into four large bowls and serve.
