Ingredients
- 1 package (8 ounces) of lean ground beef
- 1 packet of taco seasoning mix
- 1 bag (8 ounces) of shredded lettuce
- 1/2 cup of low-fat sour cream
- 2 tomatoes, diced
- 1/2 cup of shredded cheddar cheese
- 1/2 cup of black beans, rinsed and drained
- 1/2 cup of corn kernels, canned or frozen
- 1/4 cup of chopped green onions
- 1/4 cup of sliced black olives
- 1/4 cup of salsa
- 1/4 cup of light ranch dressing
Directions
- In a large skillet, cook the ground beef over medium heat until it is no longer pink. Drain fat, if necessary.
- Add the taco seasoning mix and 1/2 cup of water to the skillet. Bring to a boil and reduce heat to low. Simmer for 5 minutes.
- In a large bowl, combine the cooked ground beef, lettuce, sour cream, tomatoes, cheese, black beans, corn, green onions, olives, salsa, and ranch dressing. Mix until evenly combined.
- Divide the salad mixture into four large bowls and serve.
