Ingredients

  • 1 package of vermicelli or thin rice noodles
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup of carrots, diced
  • 1/2 cup of celery, diced
  • 1/2 cup of bell peppers, diced
  • 1/2 cup of mushrooms, diced
  • 1/2 cup of snow peas
  • 1/2 cup of water
  • 2 tablespoons of soy sauce
  • 1/4 teaspoon of ground black pepper
  • 1/4 cup of fresh parsley, chopped

Directions

  1. In a large pot, bring water to a boil and add the noodles. Cook for 4 minutes, or according to package instructions, and drain.
  2. In a large skillet, heat the olive oil over medium heat. Add the onions, garlic, carrots, celery, bell peppers, and mushrooms. Cook for 5 minutes, stirring often.
  3. Add the snow peas, water, soy sauce, and black pepper. Cook for another 5 minutes, stirring often.
  4. Add the cooked noodles to the skillet and stir to combine. Cook for an additional 5 minutes, stirring often.
  5. Add the fresh parsley and stir to combine. Serve warm.
