Ingredients
- 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 4 oz pancetta, diced
- 1/4 cup Parmesan cheese, grated
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Heat a large skillet over medium-high heat. Add pancetta and cook, stirring occasionally, until crispy, about 5 minutes.
- Meanwhile, in a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
- Add asparagus and Parmesan to the bowl and toss to combine. Add pancetta and toss again.
- Serve immediately.
