Ingredients

  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 4 oz pancetta, diced
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Heat a large skillet over medium-high heat. Add pancetta and cook, stirring occasionally, until crispy, about 5 minutes.
  2. Meanwhile, in a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
  3. Add asparagus and Parmesan to the bowl and toss to combine. Add pancetta and toss again.
  4. Serve immediately.
