Ingredients
1 lb fresh asparagus, trimmed and cut into 1-inch pieces
4 oz pancetta, diced
1/4 cup Parmesan cheese, grated
1/4 cup extra-virgin olive oil

1/2 teaspoon salt

Directions
Heat a large skillet over medium-high heat. Add pancetta and cook, stirring occasionally, until crispy, about 5 minutes.
Meanwhile, in a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
Add asparagus and Parmesan to the bowl and toss to combine. Add pancetta and toss again.
Serve immediately.
