Ingredients

  • 4 large russet potatoes
  • 1 cup Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • Salt and pepper, to taste
  • Optional topping: chopped parsley

Directions

  1. Preheat oven to 400°F.
  2. Wash the potatoes and pat them dry. Pierce them with a fork and place them on a baking sheet. Bake for 45 minutes, or until the potatoes are tender.
  3. Let the potatoes cool enough to handle. Slice each potato in half lengthwise and scoop out the insides, leaving a thin layer of potato in the skin.
  4. Place the potato skins on a baking sheet and brush them with oil. Sprinkle with salt and pepper.
  5. In a medium bowl, combine the Alfredo sauce, mozzarella cheese, and parmesan cheese. Mix until combined.
  6. Fill each potato skin with the Alfredo and cheese mixture. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish with parsley, if desired, and serve.
