Ingredients
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup mashed ripe banana
- 1/2 cup mashed ripe mango
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, sift together the flour, baking powder and salt. Stir the dry ingredients into the butter mixture alternately with the mashed banana and mango.
- Pour batter into prepared pan. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
