Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken thighs, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup chicken broth
  • 2 tablespoons bouillon powder
  • 2 tablespoons tomato paste
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 3 minutes.
  2. Add chicken, oregano, thyme, salt, and pepper and cook, stirring often, until chicken is cooked through, about 5 minutes.
  3. Stir in broth, bouillon powder, and tomato paste and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Stir in heavy cream and simmer for an additional 5 minutes.
  5. Garnish with parsley and serve.
