Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • 1/2 cup white wine
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 pound lump crabmeat, picked over for shells
  • 1/2 cup heavy cream
  • Salt to taste

Directions

  1. Melt the butter in a large stock pot over medium heat.
  2. Add the diced onion and garlic and cook, stirring often, until softened, about 5 minutes.
  3. Add the flour and cook, stirring, for 1 minute.
  4. Add the chicken broth, thyme, oregano, red pepper flakes, black pepper, and bay leaves.
  5. Bring to a boil, reduce the heat to low, and simmer for 10 minutes.
  6. Add the white wine, diced tomatoes, and tomato sauce and simmer for an additional 10 minutes.
  7. Stir in the crabmeat and cream and simmer for 5 minutes, or until heated through.
  8. Season to taste with salt.
  9. Serve hot.
