Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 2 tablespoons vanilla protein powder
  • 2 tablespoons butter, melted

Directions

  1. In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Set aside.
  2. In a separate bowl, whisk together milk, oil, eggs, and protein powder until well combined.
  3. Stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
  4. Heat a large skillet over medium heat. Grease with butter or cooking spray as needed.
  5. Using a 1/4 cup measuring cup, pour the batter onto the preheated skillet. Cook for 1-2 minutes, or until small bubbles form on the surface of the pancakes. Flip and cook for an additional 1-2 minutes, or until cooked through.
