Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Assorted food coloring
  • Lollipop sticks

Directions

  1. Preheat oven to 350°F (176°C).
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract and mix until well combined.
  4. Gradually add the flour mixture to the butter mixture and mix until just combined. Divide the dough into four equal parts.
  5. Add food coloring to each part of the dough and mix until each part is a different color.
  6. Roll each piece of dough into a log about an inch thick. Cut each log into 1-inch pieces and form each piece into a lollipop shape. Place the lollipops onto a parchment-lined baking sheet. Insert a lollipop stick in the center of each cookie.
  7. Bake for 12 minutes or until the edges are lightly golden brown. Let cool completely before serving.
