Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Assorted food coloring
- Lollipop sticks
Directions
- Preheat oven to 350°F (176°C).
- In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract and mix until well combined.
- Gradually add the flour mixture to the butter mixture and mix until just combined. Divide the dough into four equal parts.
- Add food coloring to each part of the dough and mix until each part is a different color.
- Roll each piece of dough into a log about an inch thick. Cut each log into 1-inch pieces and form each piece into a lollipop shape. Place the lollipops onto a parchment-lined baking sheet. Insert a lollipop stick in the center of each cookie.
- Bake for 12 minutes or until the edges are lightly golden brown. Let cool completely before serving.
