Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 ounces) mild enchilada sauce
  • 3 cups shredded Mexican cheese blend
  • 1 package (10 ounces) tortilla chips, crushed

Directions

  1. Preheat oven to 350°F.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook until no longer pink. Drain off fat.
  3. Add onion and bell pepper to skillet and cook until vegetables are softened, about 5 minutes. Add chili powder, cumin, garlic powder, salt, and pepper and stir to combine.
  4. Stir in diced tomatoes and enchilada sauce. Simmer for 5 minutes.
  5. Spread beef mixture in a 9x13-inch baking dish. Sprinkle with 2 cups of cheese.
  6. Sprinkle crushed chips over cheese. Top with remaining 1 cup of cheese.
  7. Bake for 20 minutes, or until cheese is melted and bubbly.
