Ingredients
- 1 pound ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 can (10 ounces) mild enchilada sauce
- 3 cups shredded Mexican cheese blend
- 1 package (10 ounces) tortilla chips, crushed
Directions
- Preheat oven to 350°F.
- Heat a large skillet over medium-high heat. Add ground beef and cook until no longer pink. Drain off fat.
- Add onion and bell pepper to skillet and cook until vegetables are softened, about 5 minutes. Add chili powder, cumin, garlic powder, salt, and pepper and stir to combine.
- Stir in diced tomatoes and enchilada sauce. Simmer for 5 minutes.
- Spread beef mixture in a 9x13-inch baking dish. Sprinkle with 2 cups of cheese.
- Sprinkle crushed chips over cheese. Top with remaining 1 cup of cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
