Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup Italian-style salad dressing
- 1/4 cup prepared pesto
- 1 pound small red potatoes, quartered
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Place chicken breasts in a shallow baking dish.
- Brush chicken with Italian salad dressing.
- Bake in preheated oven for 20 minutes.
- Meanwhile, in a large bowl, combine pesto, potatoes, olive oil, salt, and pepper.
- Mix well to coat potatoes with pesto.

- Place chicken breasts on a serving platter.
- Top with pesto roasted potatoes.
