Ingredients

  • 2 cups matzo meal
  • 1 teaspoon salt
  • 2 eggs, lightly beaten
  • 1/4 cup oil
  • 1/2 cup warm water

Directions

  1. In a medium bowl, mix together the matzo meal and salt.
  2. In a small bowl, lightly beat the eggs and add them to the matzo meal mixture.
  3. Add the oil and warm water to the mixture and stir until fully combined.
  4. Cover the bowl and set aside for 20 minutes.
  5. Bring a large pot of water to a boil.
  6. Using wet hands, form small balls out of the matzo mixture and drop them into the boiling water.
  7. Reduce the heat to low and simmer for 20 minutes.
  8. Remove the matzo-balls with a slotted spoon and serve with chicken soup or schmaltz.
