Rosemary-Lemon Chicken in the Instant Pot

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 lemon, zested and juiced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth

Directions

  1. Turn the Instant Pot to the sauté setting.
  2. Add the olive oil and garlic and cook for 1 minute.
  3. Add the chicken breasts and cook for 5 minutes, flipping halfway through.
  4. Add the rosemary, lemon zest, lemon juice, salt, and pepper and stir to combine.
  5. Add the chicken broth and stir to combine.
  6. Secure the lid and set the Instant Pot to the manual setting for 8 minutes.
  7. Once the timer goes off, allow the pressure to release naturally for 10 minutes.
  8. Once the pressure is released, carefully remove the lid and serve.
