Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 3 cups vegetable broth
  • 4 large carrots, peeled and chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup plain yogurt

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the curry powder, cumin, and turmeric and cook for 1 minute, stirring constantly.
  4. Add the vegetable broth, carrots, lemon juice, salt, and pepper and bring to a boil.
  5. Reduce the heat and simmer for 20 minutes, or until the carrots are tender.
  6. Remove from the heat and let cool for 10 minutes.
  7. Transfer the soup to a blender and blend until smooth.
  8. Stir in the yogurt and serve.
