Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- 3 cups vegetable broth
- 4 large carrots, peeled and chopped
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup plain yogurt
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the curry powder, cumin, and turmeric and cook for 1 minute, stirring constantly.
- Add the vegetable broth, carrots, lemon juice, salt, and pepper and bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the carrots are tender.
- Remove from the heat and let cool for 10 minutes.
- Transfer the soup to a blender and blend until smooth.
- Stir in the yogurt and serve.
