Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup diced red bell pepper
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Rinse quinoa in a fine mesh sieve.
  2. Add quinoa to a medium pot with 2 cups of water. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  3. Remove from heat and let stand for 5 minutes, then fluff with a fork and let cool to room temperature.
  4. In a large bowl, combine cooked quinoa with cucumber, tomatoes, red onion, parsley, mint, and bell pepper.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over quinoa mixture and gently toss to combine.
  7. Serve chilled or at room temperature.
