Ingredients

- 2 cups kale, chopped

Directions
- Heat the oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the rice and kale and stir to combine. Cook for an additional 5 minutes, stirring occasionally.
- Push the mixture to one side of the skillet and add the eggs to the other side. Cook the eggs until lightly scrambled, about 3 minutes.
- Stir the eggs into the rice mixture and season with salt and pepper to taste.
- Serve warm.
