Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cups cooked white rice
2 cups kale, chopped

Salt and pepper, to taste
Directions
Heat the oil in a large skillet over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.

Push the mixture to one side of the skillet and add the eggs to the other side. Cook the eggs until lightly scrambled, about 3 minutes.
