Ingredients

  • 2 pig's feet
  • 1/4 cup salt
  • 1 tablespoon black peppercorns
  • 2 cloves of garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 bay leaves
  • 2 cups white vinegar
  • 2 cups water

Directions

  1. Put the pig's feet in a large pot and cover with cold water. Add the salt and bring to a boil. Reduce the heat and simmer for 1 hour.
  2. Drain the feet and set aside to cool.
  3. In a small bowl, combine the black peppercorns, garlic, red pepper flakes, oregano, cloves, allspice, ginger, and nutmeg. Mix together.
  4. In a large glass jar, layer the cooled pig's feet and the spice mixture. Add the bay leaves.
  5. In a saucepan, bring the vinegar and water to a boil. Pour the hot liquid over the pig's feet.
  6. Seal the jar and store in the refrigerator for at least 24 hours before serving.
