Ingredients
- 2 pig's feet
- 1/4 cup salt
- 1 tablespoon black peppercorns
- 2 cloves of garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 2 bay leaves
- 2 cups white vinegar
- 2 cups water
Directions
- Put the pig's feet in a large pot and cover with cold water. Add the salt and bring to a boil. Reduce the heat and simmer for 1 hour.
- Drain the feet and set aside to cool.
- In a small bowl, combine the black peppercorns, garlic, red pepper flakes, oregano, cloves, allspice, ginger, and nutmeg. Mix together.
- In a large glass jar, layer the cooled pig's feet and the spice mixture. Add the bay leaves.
- In a saucepan, bring the vinegar and water to a boil. Pour the hot liquid over the pig's feet.
- Seal the jar and store in the refrigerator for at least 24 hours before serving.
