Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 2 boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- 1 teaspoon black pepper

- 1/2 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 1 (10.5 ounce) can cream of chicken soup
- 2 tablespoons cornstarch
- 1/4 cup water
Directions
- Set the Instant Pot to the sauté setting. Heat the olive oil and add the onion and garlic. Cook for about 3 minutes, stirring often.
- Add the bell peppers, chicken, salt, pepper, oregano, and red pepper flakes (if desired). Cook for about 5 minutes, stirring often.
- Add the chicken broth and cream of chicken soup. Stir to combine.
- Secure the lid and set the Instant Pot to high pressure for 8 minutes. When the 8 minutes are up, quick release the pressure.
- In a small bowl, whisk together the cornstarch and water. Pour the mixture into the Instant Pot and stir to combine.
- Serve the pepper chicken over cooked rice or noodles.
