Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 2 boneless, skinless chicken breasts, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 2 tablespoons cornstarch
  • 1/4 cup water

Directions

  1. Set the Instant Pot to the sauté setting. Heat the olive oil and add the onion and garlic. Cook for about 3 minutes, stirring often.
  2. Add the bell peppers, chicken, salt, pepper, oregano, and red pepper flakes (if desired). Cook for about 5 minutes, stirring often.
  3. Add the chicken broth and cream of chicken soup. Stir to combine.
  4. Secure the lid and set the Instant Pot to high pressure for 8 minutes. When the 8 minutes are up, quick release the pressure.
  5. In a small bowl, whisk together the cornstarch and water. Pour the mixture into the Instant Pot and stir to combine.
  6. Serve the pepper chicken over cooked rice or noodles.
