Vegetarian Broccoli Casserole II
Ingredients
1 cup of butter, softened
1 ½ cups of firmly packed brown sugar
2 eggs
2 teaspoons of vanilla extract
3 ripe bananas, mashed
2 cups of all-purpose flour
1 teaspoon of baking soda
½ teaspoon of salt
1 cup of chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
In a large bowl, cream together the butter, brown sugar, eggs, and vanilla extract.
Stir in the mashed bananas.
In a separate bowl, combine the flour, baking soda, and salt. Gradually stir the flour mixture into the banana mixture.
Stir in the chopped walnuts.
Spread the batter evenly into the prepared pan.
Bake for 25 minutes in the preheated oven, or until a toothpick inserted into the center of the pan comes out clean.
Allow to cool before cutting into bars.
