Lentil, Quinoa, and Mung Bean Salad

Ingredients

  • 1 cup dried lentils
  • 1 cup quinoa
  • 1 cup mung beans
  • 2 tablespoons olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese (optional)

Directions

  1. Rinse the lentils, quinoa, and mung beans in a fine mesh sieve and set aside.
  2. In a medium saucepan, bring 3 cups of water to a boil. Add the lentils, quinoa, and mung beans and simmer for 15 minutes.
  3. Strain the cooked lentils, quinoa, and mung beans and transfer to a large bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, cumin, salt, and pepper.
  5. Pour the dressing over the cooked lentils, quinoa, and mung beans and stir to combine.
  6. Stir in the parsley, mint, red onion, and cilantro.
  7. If desired, sprinkle with feta cheese.
  8. Serve chilled or at room temperature.
