Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 carrots, diced
1 stalk celery, chopped

4 cups vegetable broth

Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, bell pepper, carrots, and celery and sauté for 5 minutes.
Add the thyme, oregano, bay leaf, and vegetable broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
Add the tomatoes, black pepper, spinach, and parsley and cook for an additional 5 minutes.
Remove the bay leaf and serve hot.
