Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 1 stalk celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups fresh spinach leaves, chopped
  • 1/4 cup parsley, chopped

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, bell pepper, carrots, and celery and sauté for 5 minutes.
  2. Add the thyme, oregano, bay leaf, and vegetable broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Add the tomatoes, black pepper, spinach, and parsley and cook for an additional 5 minutes.
  4. Remove the bay leaf and serve hot.
