Directions

In a large bowl, cream together butter, brown sugar, and maple syrup until light and fluffy.
Add in pumpkin puree and vanilla extract and mix until fully incorporated.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the vegan milk and chopped walnuts.
Fill each muffin cup with the batter and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Allow muffins to cool before serving.
