Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup vegan butter
  • 1/2 cup light brown sugar
  • 1/2 cup maple syrup
  • 1 cup pureed pumpkin
  • 1 teaspoon vanilla extract
  • 1/3 cup vegan milk
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a large bowl, cream together butter, brown sugar, and maple syrup until light and fluffy.
  4. Add in pumpkin puree and vanilla extract and mix until fully incorporated.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the vegan milk and chopped walnuts.
  7. Fill each muffin cup with the batter and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
