Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon Cajun seasoning
  • Salt and pepper, to taste
  • 1 cup cooked brown rice
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell pepper, zucchini, and chickpeas and cook until the vegetables are tender, about 8 minutes.
  4. Stir in the Cajun seasoning, salt, and pepper.
  5. Stir in the cooked brown rice and cook until heated through, about 3 minutes.
  6. Stir in the parsley and serve.
