Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 cup kale, chopped
  • 1/4 cup vegetable broth

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, paprika, salt, and pepper and cook for 1 minute more.
  3. Add the green beans and kale and stir to coat with the spices. Cook for 3 minutes, stirring occasionally.
  4. Add the vegetable broth and cook until the green beans are tender, about 5 minutes more.
  5. Serve hot or cold.
