Lemony Lentils with Kale

Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups chopped kale

Directions

  1. Rinse the lentils and pick out any stones or debris.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion and garlic and sauté until softened, about 5 minutes.
  4. Add the lentils, vegetable broth, lemon juice, thyme, salt, and pepper and bring to a boil.
  5. Reduce the heat and simmer until the lentils are tender, about 20 minutes.
  6. Add the kale and cook until wilted, about 5 minutes.
  7. Taste and adjust the seasoning if needed.
  8. Serve hot.
