Ingredients
1 cup dried lentils
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
2 cups vegetable broth
2 tablespoons freshly squeezed lemon juice
1 teaspoon dried thyme
Salt and pepper to taste
4 cups chopped kale
Directions
Rinse the lentils and pick out any stones or debris.
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and sauté until softened, about 5 minutes.
Add the lentils, vegetable broth, lemon juice, thyme, salt, and pepper and bring to a boil.
Reduce the heat and simmer until the lentils are tender, about 20 minutes.
Add the kale and cook until wilted, about 5 minutes.
Taste and adjust the seasoning if needed.
Serve hot.
