Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups chopped kale
Directions
- Rinse the lentils and pick out any stones or debris.
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the lentils, vegetable broth, lemon juice, thyme, salt, and pepper and bring to a boil.
- Reduce the heat and simmer until the lentils are tender, about 20 minutes.
- Add the kale and cook until wilted, about 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot.
