Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup cooked, diced chicken
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. In a large pot over medium heat, melt the butter. Add the garlic and onion and cook, stirring occasionally, until the onion is translucent, about 5 minutes.
  2. Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  3. Stir in the cream, chicken, and lemon juice and continue to simmer for 5 minutes.
  4. Stir in the parsley and season with salt and pepper to taste.
  5. Serve hot.
