Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 1/2 cup confectioners' sugar

Directions

  1. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour and salt. Gradually add the flour mixture to the creamed mixture, mixing until just blended.
  5. Spread the batter into a greased 9x13 inch baking pan.
  6. Bake at 350 degrees F (175 degrees C) for 25 minutes.
  7. Meanwhile, in a small saucepan, combine the lemon juice and confectioners' sugar. Cook and stir over low heat until blended and smooth.
  8. Remove the cake from the oven and spread the lemon juice mixture over the top.
  9. Return to the oven and bake for an additional 5 minutes.
  10. Cool before cutting into bars.
