Ingredients
- 1 9-inch unbaked pie crust
- 1 ½ cups white sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 3 eggs, separated
- 1 ½ cups water
- 2 tablespoons butter
- 2 tablespoons lemon zest
- 2/3 cup fresh lemon juice
- 1/3 cup sweetened shredded coconut flakes
- 1/3 cup sugar
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium saucepan, combine 1 ½ cups sugar, cornstarch, and salt. Stir in eggs, water, butter, and lemon zest. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute; remove from heat.
- Pour hot filling into pie crust.
- In a medium bowl, beat egg whites until foamy. Gradually add 1/3 cup sugar, beating until stiff peaks form. Spread meringue over filling, sealing edges to crust.
- Bake in preheated oven for 12 minutes, or until meringue is golden brown. Cool before serving.
- Sprinkle with sweetened coconut flakes before serving.
