Ingredients
1 pound lamb stew meat
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups beef broth
1 can (14.5 ounces) diced tomatoes
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound asparagus, trimmed and cut into 1-inch pieces
Directions
In a large pot or Dutch oven, heat the oil over medium heat.
Add the lamb and cook until browned, about 5 minutes.
Add the onion and garlic and cook for another 3 minutes.
Pour in the beef broth and bring to a boil.
Stir in the tomatoes, oregano, thyme, salt, and pepper. Reduce the heat and simmer for 15 minutes.
Add the asparagus and simmer for another 15 minutes, or until the asparagus is tender.
Serve hot with crusty bread.
