Ingredients
- 1 pound of beef stew meat
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 beets, peeled and diced
- 2 stalks of celery, diced
- 1 head of cabbage, shredded
- 2 large potatoes, diced
- 4 cups of beef broth
- 2 tablespoons of tomato paste
- 1 teaspoon of paprika
- 1 teaspoon of caraway seeds
- 1 teaspoon of dried dill
- Salt and pepper to taste
- Sour cream, for serving
Directions
- In a large pot, heat some oil over medium-high heat. Add the beef and season with salt and pepper. Cook until the beef is browned.
- Add the onion, garlic, carrots, beets, celery, and cabbage. Cook for 5-7 minutes, stirring occasionally.
- Add the potatoes, beef broth, tomato paste, paprika, caraway seeds, and dill. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Taste and adjust seasoning as desired. Serve with a dollop of sour cream.
