Ingredients
1 pound of beef stew meat
1 onion, diced
2 cloves of garlic, minced
2 carrots, diced
2 beets, peeled and diced
2 stalks of celery, diced

Taste and adjust seasoning as desired. Serve with a dollop of sour cream.
