Ingredients
- 1 teaspoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup wild rice, rinsed and drained
- 2 cups chicken or vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup frozen peas
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked and diced turkey
- 1/2 cup shredded cheddar cheese
Directions
- Preheat oven to 350°F.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the wild rice and cook for 1 minute.
- Add the broth, carrots, celery, peas, salt, and pepper, and bring to a boil. Reduce heat and simmer for 20 minutes, or until the rice is tender.
- Stir in the turkey. Transfer to a 2-quart baking dish and sprinkle with cheese. Bake for 15 minutes, or until cheese is melted.
