Ingredients

  • 1 teaspoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup wild rice, rinsed and drained
  • 2 cups chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked and diced turkey
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the wild rice and cook for 1 minute.
  3. Add the broth, carrots, celery, peas, salt, and pepper, and bring to a boil. Reduce heat and simmer for 20 minutes, or until the rice is tender.
  4. Stir in the turkey. Transfer to a 2-quart baking dish and sprinkle with cheese. Bake for 15 minutes, or until cheese is melted.
  5. Serve and enjoy!
