Ingredients
- 1 cup whole wheat flour
- 1/2 cup almond meal
- 3/4 cup light brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1/2 cup melted coconut oil or canola oil
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin tin.
- In a large bowl, combine the flour, almond meal, sugar, baking powder, baking soda, and salt. Stir in the raisins.
- In a separate bowl, whisk together the oil, almond milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Divide the batter evenly among the prepared muffin cups. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool for 5 minutes before removing from the pan.
