Ingredients
- 3 eggs
- 1 cup of sugar
- 2/3 cup of pumpkin puree
- 3/4 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of ground nutmeg
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of salt
- 1 cup of walnuts, chopped
- 1 cup of powdered sugar
Directions
- Preheat oven to 375°F.
- In a large bowl, beat eggs until light and fluffy.
- Gradually add in sugar and beat until light and fluffy.
- Add in pumpkin puree and mix until well combined.
- In a separate bowl, sift together flour, baking powder, nutmeg, cinnamon, and salt.
- Gradually add in dry ingredients to wet ingredients and mix until just combined.
- Stir in walnuts.
- Spread batter onto a greased 15x10 inch baking sheet.
- Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool completely.
- Once cooled, sprinkle top with powdered sugar.
- Carefully roll up the cake, and cut into slices.
