Ingredients
3 eggs
1 cup of sugar
2/3 cup of pumpkin puree
3/4 cup of all-purpose flour
1 teaspoon of baking powder
1 teaspoon of ground nutmeg
1 teaspoon of ground cinnamon
1/2 teaspoon of salt
1 cup of walnuts, chopped
1 cup of powdered sugar
Directions
Preheat oven to 375°F.
In a large bowl, beat eggs until light and fluffy.
Gradually add in sugar and beat until light and fluffy.
Add in pumpkin puree and mix until well combined.
In a separate bowl, sift together flour, baking powder, nutmeg, cinnamon, and salt.
Gradually add in dry ingredients to wet ingredients and mix until just combined.
Stir in walnuts.
Spread batter onto a greased 15x10 inch baking sheet.
Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool completely.
Once cooled, sprinkle top with powdered sugar.
Carefully roll up the cake, and cut into slices.
