Bring 2 cups of water to a boil in a medium saucepan. Add the jasmine rice, reduce heat to low, cover and simmer for 15 minutes.
While the rice is cooking, heat the coconut oil in a large skillet over medium heat. Add the chicken and cook for 5 minutes on each side, until golden brown and cooked through.
In a small bowl, combine the soy sauce, garlic, ginger, sugar, fish sauce, sesame oil, cilantro, mint, basil, and chives. Pour the sauce over the chicken and cook for 2 minutes over medium heat, until the sauce is thick and bubbly.
Serve the chicken and sauce over the cooked jasmine rice and enjoy!
