Ingredients

  • 1 cup jasmine rice
  • 2 tablespoons coconut oil
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon sugar
  • 1 teaspoon fish sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh chives, chopped

Directions

  1. Bring 2 cups of water to a boil in a medium saucepan. Add the jasmine rice, reduce heat to low, cover and simmer for 15 minutes.
  2. While the rice is cooking, heat the coconut oil in a large skillet over medium heat. Add the chicken and cook for 5 minutes on each side, until golden brown and cooked through.
  3. In a small bowl, combine the soy sauce, garlic, ginger, sugar, fish sauce, sesame oil, cilantro, mint, basil, and chives. Pour the sauce over the chicken and cook for 2 minutes over medium heat, until the sauce is thick and bubbly.
  4. Serve the chicken and sauce over the cooked jasmine rice and enjoy!
