Ingredients
- 1 package of shirataki noodles
- 2 carrots, grated
- 2 tablespoons of curry powder
- 1 teaspoon of ground ginger
- 1 teaspoon of garlic powder
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of all-purpose flour
- 1/4 cup of bread crumbs
- 1 egg, lightly beaten
- Vegetable oil, for frying
Directions
- Drain and rinse the shirataki noodles and pat dry.
- In a medium bowl, combine the shirataki noodles, grated carrots, curry powder, ginger, garlic powder, salt, and pepper. Mix until all ingredients are evenly distributed.
- In a separate bowl, mix the flour and bread crumbs together.
- Roll the noodle mixture into 1-2 inch balls and roll each ball in the flour-breadcrumb mixture. Place on a plate or baking sheet.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Dip each croquette in the beaten egg, then place in the hot oil. Fry for 3-4 minutes or until golden brown. Remove from the pan and place on a plate lined with paper towels.
- Serve warm with your favorite dipping sauce.
