Ingredients

  • 1 package of shirataki noodles
  • 2 carrots, grated
  • 2 tablespoons of curry powder
  • 1 teaspoon of ground ginger
  • 1 teaspoon of garlic powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of all-purpose flour
  • 1/4 cup of bread crumbs
  • 1 egg, lightly beaten
  • Vegetable oil, for frying

Directions

  1. Drain and rinse the shirataki noodles and pat dry.
  2. In a medium bowl, combine the shirataki noodles, grated carrots, curry powder, ginger, garlic powder, salt, and pepper. Mix until all ingredients are evenly distributed.
  3. In a separate bowl, mix the flour and bread crumbs together.
  4. Roll the noodle mixture into 1-2 inch balls and roll each ball in the flour-breadcrumb mixture. Place on a plate or baking sheet.
  5. Heat the vegetable oil in a large skillet over medium-high heat.
  6. Dip each croquette in the beaten egg, then place in the hot oil. Fry for 3-4 minutes or until golden brown. Remove from the pan and place on a plate lined with paper towels.
  7. Serve warm with your favorite dipping sauce.
