Ingredients

  • 1 pound of soba noodles
  • 1 cup of frozen sweet peas
  • 2 tablespoons of sesame oil
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of low sodium soy sauce
  • 1 teaspoon of brown sugar
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste

Directions

  1. Cook the soba noodles according to the package instructions.
  2. In a medium bowl, combine the sesame oil, rice vinegar, soy sauce, brown sugar, garlic, and ginger. Whisk to combine.
  3. Add the cooked soba noodles and frozen sweet peas to the bowl and toss to coat.
  4. Season with salt and pepper to taste.
  5. Serve warm or chilled.
